Cheeky Chocolate Rice Cakes

Ingredients
- 12 Woolworths Thin Brown Rice Cakes Original
- 145 grams Nestle Bakers' Choice Milk Choc Melts
- As desired Crushed Raw Nuts eg., Hazelnuts, Macadamia Nuts, Almonds, Pistachios
- As desired Finely Chopped Fresh Fruit eg., Raspberries, Strawberries, Figs
- As desired Red Rock Deli Nuts (Vanilla Cranberry & Honey mix).
Method

Place the chocolate melts in glass flat-bottom bowl/dish & put in microwave at medium (50%) power for a minute. Remove from microwave & stir well.

Return to microwave for 20 seconds on low. Remove & again stir well. Repeat this step until chocolate has melted thoroughly.

Place individual rice cake flat side down in melted chocolate for a moment. Remove carefully using a spoon for leverage & lay (chocolate side facing up) on a tray lined with baking paper. *You may need to gently spread the chocolate using the back of the spoon for even coverage.

Repeat step 3 for all rice cakes.

Sprinkle your choice of nuts or fruits (the possibilities are endless) over the top & place in fridge until chocolate sets. Personal favourites are fresh raspberries & hazelnuts, strawberries & macadamia nuts or Red Rock Deli Nuts (Vanilla Cranberry & Honey mix). Frozen fruit makes for a cool summer treat. Also delicious enjoyed simply bare.

Place in an airtight container & store in refrigerator .... if they last that long!
